RE: MAKE-UP AIR AND KITCHEN EXHAUST ATt3995 MAIN SrREET.
Dear Mr. Lee;
Our company has performed an inspection and verification regard-
ing the balance between the make-up air and the kitchen exhaust system.
The kitchen hood has 57.7 square feet of surface area. It is regarded as
a type 1 installation. The CFM requirements are 5800. The primary make-
up air unit is a McGraw-Edison with 4420 CFM at .85 S.P. The dishwasher
exhaust is 1080 CFM at .5 S.P. The other make-up air, in the electrical
service room, is 2160 CFM at .5 S.P. Total exhaust is 6880 (kitchen hood
5800 plus dishwasher 1080). Total make-up air is 6580 CFN. (Kitchen
hood 4420 plus electrical room make-up air 2160.) This creates a 4% neg-
ative pressure in the kitchen.
We conclude that the kitchen exhaust and make-up air systems are
properly balanced.
